Day 115... "Cooking Like a Rockstar"

I was so excited when my hubby gave me a copy of Chef Anne Burrell's "Cooking like a Rockstar" Here is our first attempt!  "Big Brown Braised Short Ribs" We really enjoyed the ribs and since I am trying very hard to be good and semi-stick to my "Biggest Loser" plan, we chose to replace the mashed potatoes with mashed cauliflower. It was all very tasty! :)

Mashed Cauliflower 

Ingredients

  • 8 cups bite-size cauliflower florets (about 1 head)
  • 2 - 4 cloves garlic, crushed and peeled
  • 1/3 cup nonfat milk or chicken stock
  • 1 teaspoon butter
  • 1/2 teaspoon salt
  • Freshly ground pepper to taste
  • Snipped fresh chives for garnish

Preparation

  1. Place cauliflower florets and garlic in  boiling water, cook until very tender, 12 to 15 minutes. (Alternatively, place florets and garlic in a microwave-safe bowl with 1/4 cup water, cover and microwave on High for 3 to 5 minutes.)
  2. Place the cooked cauliflower and garlic in a food processor. Add milk,  butter, salt and pepper; pulse several times, then process until smooth and creamy. Transfer to a serving bowl.  You can drizzle with the  2 teaspoons oil and garnish with chives, if desired. Serve hot.

Per serving: 107 calories; 7 g fat ( 1 g sat , 4 g mono ); 3 mg cholesterol; 10 g carbohydrates; 0 g added sugars; 5 g protein; 4 g fiber; 339 mg sodium; 288 mg potassium

Day 110... Thinking!

       Today, I got thinking about some of the things that was on the Biggest Loser last night. I watch them exercise and I watch them change their diets, but I have often wondered where all their extra skin goes at the end of the season. Because as much as I try, mine is just starting to hang there, the fat is going away but the stretched skin on my belly is just there. :(

Day 100..... 100 Days and Counting!

        Wow, I can't believe that I am headed for the final count down. Christmas break killed me and now I feel like I am totally starting over and it is starting to get cooler here at the beach. Plus running at 7:30 in the morning on the beach is starting to make me a little nervous. As much as I enjoy my beach time ALONE, I really don't like being the only human creature on the sandy shore that early in the morning.

Day 96..... A Season of NO EXCUSES!

I like the theme of this Season's "Biggest Loser". But, right now at this moment, I seriously have to think about my commitment of running on the beach, because it is really really cold here!!!! :( 

The other thing I noticed this season was that there is more concentration on the individual and not so much on the team or beginning partnerships. I am not sure how I feel about this, because I know that my journey works for me, but it works better when my partner (my hubby) is by my side. So it will be interesting to see how the show develops,

Day 95... New Year, New Season, NEW START!

        Tonight starts the new season of "Biggest Loser", I am so excited! Last season was such a dud for me. I only lost five pounds through out the whole season... :( I know that five is better than none, but still!
         I did learn some awesome things during the last show and I have already started applying them in my life. During this past year as I have watched my fourth son start to mature and grow into more adult-style roles and going through my own frustrations of not being able to achieve some of my goals that I had set for myself, I came to the realization that things in life are just what they are and we are who we are, in-spite of all our technical difficulties.
         And yet, I can't help but think how much simpler his life would be if his "Choices were based on Consequences rather than his Consequences being based on his Choices". I got thinking about this new thought phrase and how it would make a great motto and a jump start for a prosperous, healthy New Year for me. Let me give you an example:  " I am healthy, because I choose to eat wisely" verses "I choose to eat unwisely, therefore I am not healthy!"

       As we move into a new year there is always so much talk and hipe about New Year Resolutions. Me...? I just do an over all summery of where I was, what I got done and where I am headed next! Day 93... Happy New Year
